Weathering Winter Well!
Green Pasture Products has a great blog post on "Seasonal Wellness: Ways to Prepare Your Body for Winter", that we firmly believe in.

Nutrition and how it affects our health and getting the nutrients you need through food...we are also huge proponents of bone broth as is Green Pasture Products.
My go to in a bit of a pinch is to simmer a whole chicken carcass that was cooked in a crock pot ahead of time with a small amount of meet left on the bones for at least an hour and a half...better if you can simmer for many hours but we don't always have that amount of time do we? Cover chicken with filtered water and a tablespoon of apple cider vinegar...if you have time, let that sit for 30 minutes before turning on the burner. Then add organic celery, I like to saute in ghee first, and add fresh or powdered organic ginger to your liking, Himilayan sea salt and pepper to taste. I am very sensitive to certain spices so we are minimal here...but if you are not...please add garlic and tumeric as well as these are excellent for boosting immunity. About 20 minutes to the end of simmering I also add sauteed button mushrooms, organic jasmine brown rice, or organic brown rice spirals. After rice or pasta is cooked I turn off burner and add back in chunks of dark and white meat already cooked chicken from the whole chicken previously cooked in our crock pot...Side Bar...when I cook the whole chicken in the crock pot ahead of time, I add some filtered water only a small amount to cover bottom, sea salt, rosemary, and olive oil and sometimes ghee on the top of the chicken. Side side bar: Did you know if you chicken is still frozen you can boil water and pour the boiling water over the frozen whole chicken that you have in the crock pot, put the lid on and place on high for an hour to hour an a half depending on the size of the bird, then turn down to low for 4 1/2 to 5 hours. Can you tell I am Italian. There is a little of this and a little of that and lots of gained knowledge working alongside an Italian Mom, Aunts, and Grandmother.
